Sweet and Sour Tuna
This Calabrian recipe is an easy, traditional way to cook tuna filets, a commodity from the seas around Calabria. It's done in about 20 minutes but is delectable!
TUNA STEAKS IN SWEET AND SOUR SAUCE WITH SWEET ONIONS
Tuna steaks
Extra virgin olive oil
1 sweet onion, thinly sliced
Vinegar
Salt, pepper and minced parsley
Lightly dust the tuna steaks with flour. Saute in warmed olive oil, turning carefully. When browned, remove to a plate.
Add a little more olive oil to the pan and then saute the thinly sliced onions (Tropea sweet onions from Calabria are used here, of course!)
Sprinkle with salt and pepper, then half a cup of water and half a cup of vinegar. Cover and simmer until the onion is soft but not dry.
Put the tuna steaks back into the pan, sprinkle with salt, pepper and minced parsley. Let simmer in the sauce of a few minutes to absorb the flavors. Serve with the onion slices on top.
