In the classic beauty of the Umbrian hills, the restaurantis formally named La Taverna del Giullare, though it's more commonly referred to as La Corte. That's because it is located inside the Charme and Relax hotel, La Corte di Bettona. Country-chic elegance is the overall atmosphere here. The dining room is charming with stone arches and walls, along with wide windows for a view. There is a sunny terrace for warm-weather dining.

The chef uses predominantly products of the surrounding area: salami and prosciutto from Norcia, lentils from Castelluccio, and forest foraged mushrooms and truffles. While the focus is on regionality, the menu takes a sophisticated turn. Traditional tagliolini al cacio e pepe (homemade fine noodles with local hard pecorino cheese and ground pepper, a classic of the area) is given pizzazz with gratings of truffles on top. Lasagne is made with porcini mushrooms and shrimp tucked into the layers. There is wild boar with polenta for cold nights and light river bass cooked parchment.

This is a nice place for special occasions or a romantic evening out.
