Pollo Abruzzese - Chicken Recipe
A delectable way to serve chicken, from the hearty recipe books of Abruzzo, the heartland of Italy's country cooking. It's not just delicious, it's easy to make and will make everyone at the table smile. Be sure to have some good bread to clean up the plate with!
Pollo Abruzzese (Abruzzo-style chicken)
A chicken, cut up in pieces
1 onion, thinly sliced
Roasted peppers (fresh or jarred), to taste
1 can peeled tomatoes (16 oz), preferably San Marzano variety
Salt and pepper, a little peperoncino (chile pepper flakes) if desired
Brown the chicken pieces in olive oil along with the onion slices, until chicken is golden and onion is tender. Sprinkle with salt and pepper and then add the tomatoes, cut into pieces, with the juice. Simmer over medium heat until the chicken is cooked and the tomatoes form a sauce. Add the peppers, sliced thin, and let simmer about 10 minutes to mingle the flavors, then serve. You can drizzle on a bit of piccante chile oil, like the Abruzzese like to do, if you want a bit of spice with it. :)
