They'll introduce you to the greengrocers and fishmongers, vintners and vendors, and then you'll get your hands in the pasta and learn how to make the time-honored recipes of Puglia for yourself. They offer day courses, week-long classes and special custom courses, too. With weeks either in the historic centre of Lecce, or at the baron's castle an hour south of Lecce.
